Casserole tamale is a peculiar Cuban food recipe, but tamales are original from Mesoamerica. They are very popular in Mexico and in Cuba they are considered as part of traditional Cuba food. However, tamales date back to 5000 or 8000 BCE. There are evidences of tamale use in the Inca Empire, long before the Spanish arrived to this part of the world.

Cut the pork into cubes and season it with garlic and lemon. Stir fry the meat and depending on the amount of fat you get, add enough oil to make a sauce with the onion, the pepper, the tomato and the dry wine
Tamale
Blend the ground corn with the water. Strain it and add it to the meat in the sauce. Cook for about an hour stirring occasionally to prevent from sticking. Season it with salt and pepper to taste.
