Cuba Black Beans
Black beans are part of a nutritious, Cuba food recipe, popular in the Caribbean cuisine and also in Mexico. They are native to the Americas. 7,000 years ago these beans were a staple food in the diets of Central and South Americans.
Today, it is hard to see a meal in Cuba that would not include black beans. Great black beans are supposed to be soft and kind of mushy.
Try this easy to make Cuba food recipe, I’m sure you will like it.
1 cups of dried black beans
2 qts. water
2/3 cups of olive oil
6 cloves of garlic
2 onions
1 tsp. salt (to taste)
1/2 tsp. ground cumin
1/4 tsp. whole dried oregano, crushed
2 bay leaves
1 tablespoon chopped fresh cilantro
2 tbsp. dry wine
1 1/2 tbsp. vinegar
Black Beans
Pick over beans and discard any broken, shrivelled beans or foreign particles. Wash them well. Discard any beans that float to top. Place them in a pressure cooker with water and bay leaves. Cook for about 40 minutes. (Check the user guide of your pressure cooker for specifications.)
(If you are not using a pressure cooker, soak beans overnight in sufficient water to cover plus about 2 inches. The day after drain beans, rinse in fresh running water and drain again. Place them in a large pot of water. Bring to boil and then reduce heat to medium. Cover, and simmer about 45 minutes.)
Meanwhile, peel and finely chop garlic and onions. Heat 2/3 cups olive oil in a frying pan and gently sauté garlic and onions for about 10 minutes. Stir occasionally. Add 1 cup of drained cooked black beans and mash together with the rest of the ingredients in the frying pan.
After 40 minutes, carefully remove the lid of the pressure cooker and add the mixture to the pot with 1/2 teaspoon of salt, oregano, cumin and vinegar. Cook it uncovered until it thickens as desired. You can add more water if required.
(If you are not using a pressure cooker, cover and simmer 1 hour on medium heat. Add salt, oregano, cumin and vinegar and, cover. Cook over low heat for another 30 minutes or until it thickens as desired.)
I like to sprinkle it with chopped onions and serve alone. Cubans usually eat it with rice.
Note: 1 cup of dried black beans equals about 2 1/2 cups cooked beans.
