Yucca with mojo is one of the most popular Cuba food recipes. It is always present in any celebration in the country and it is considered a staple root vegetable in Cuba.
It is easy to make and the mojo can be used as a dressing for other dishes.
Yucca With Mojo
4 – 5 pounds of yucca
1/2 cup oil
8 large cloves garlic
1/2 cup sour orange juice, fresh and or
1 tsp salt, or to taste
Peel yucca and cut it into 6-7 cm chunks. Put it in a pot with water, add salt to taste and boil until it is tender.
Mash the garlic with the salt. Squeeze the orange and add it to the garlic. Heat the oil in a saucepan and when it is overheated add it to the previous mixture. Serve with the boiled yucca.
